Okonomiyaki is a Japanese teppan-yaki dish consisting of a pan-fried batter cake and various ingredients, such as meat, shellfishes, and vegetables , etc.
Okonomiyaki is mainly associated with Kansai or Hiroshima areas,
Kansai-style okonomiyaki is a pan-fried batter cake, grated yam(yamaimo), dashi (dashi is a broth made by boiling kombu or kezurikatsuo), eggs and shredded cabbage, and moreover contains green onion, meat, octopus, squid, shrimp, vegetables, kimchi(Kimchi is a traditional Korean pickles.), and mochi(Mochi is a Japanese rice cake made of glutinous rice.), etc.
This dish is said to have originated in Osaka.
Osaka is the largest city in the Kansai region.
By the way, Okonomi means "what you like" and Yaki means "cooked" inJapanese.
By such a reason, most okonomiyaki restaurants are set up as grill-it-yourself establishments.
The customer mixes a bowl of raw ingredients provided from the server. and grills at tables fitted with hotplates.
The batter and other ingredients are fried on both sides on a hot plate, using a metal spatula.
